Which grain size do I need?With the coarse grain size 400 (JIS = FEPA 280) you get a basic sharpness even with blunt knives. Likewise, slight damage to the blade can be eliminated. With the 1000 grit (FEPA 400) you make the main sanding and the occasional re-sharpening. For most household knives, these two grains are perfect.For very high quality knives you can also achieve a better sharpness with a combination grindstone with the grit 3000/8000.
