Organic green lentils (Lens culinaris).

Packed on equipment that handles wheat.

To Prepare

Wash- the lentils with cold water. Lentils do not need to be soaked.

Cook- use a heavy pot, add water about 21/2 to 3 times the amount of lentils, and sea salt.

Cover, bring to a boil, reduce heat to a low- medium and simmer for about 50 minutes. Let sit covered for 10 minutes. Put in serving dish and garnish with minced parsley and/or chopped scallions.

Note1/2 cup dry lentils = 1 1/2 cups cooked.
