The history of Baileys

Baileys Irish Cream was originally created by Tom Jago of Gilbeys (a division of International Distillers & Vintners), as it searched for something to introduce to the global market. The development process began in 1971, when consultants David Gluckman and Hugh Seymour-Davies devised the famous blend of whiskey and cream that dominates the flavour today. To prevent the separation of these ingredients during manufacture, the two were homogenised to form an emulsion during storage. This way, no preservatives were required to achieve the smooth, rich texture.

Having combined the two simple treasures that their country was known and celebrated for, these visionaries were soon to become cemented in history as some of the world’s most treasured alcoholic creators, bringing the Original flavour to market in 1974. Alongside flares and Disco music, it was, perhaps, the greatest invention of the decade.

How is Baileys made?

As with all things stylish, scrumptious, and sophisticated, the key to success lies with the ingredients… and Baileys is no different. Every year, roughly 200 million litres of fresh Irish milk are used to produce the charmingly creamy texture we’ve come to know and love (that’s enough to make about 3 billion milkshakes!). Generally speaking, the Irish have been distilling whiskey for around 1000 years, when monks brought the techniques home from their visits to Mediterranean countries.
