How to make espressos with an espresso machine
Making the perfect espresso can often feel like a daunting task, especially if you haven’t had much previous experience. But, lucky for you, it only requires a few simple things (including good-quality coffee beans and an excellent brewing recipe), and our range of espresso machines is a brilliant place to start!
First, ensure that your portafilter is completely clean. Both moisture and leftover grounds are likely to have been left behind from your previous brew, and this can make future espressos taste over-extracted (or astringent and bitter), so use a cloth to wipe away any remains. Secondly, dose correctly! This should be pretty easy as, with on-demand grinders, all you need to do is push a button with your portafilter on-hand. However, if you want to be really professional, double-check your dose on a scale, before distributing and tamping (to ensure that your extraction is exact). Your grinder will probably leave the grounds in a pyramid shape, so be sure to even these out properly before tamping.
The concept of ‘tamping’ seems to fluster some people, but there really is science behind it (the aim is to remove air pockets in the coffee puck, so the grounds are completely level). Tamp until you feel that the puck is completely compressed, or, in other words, until it won’t go down any more, making sure that it’s entirely horizontal as you go.
Finally, before inserting the portafilter into the machine’s head, ensure that the head is clean, removing any remaining grounds. Insert the portafilter and start brewing immediately, as the heat from the head could burn the surface of your coffee if left for too long, which can cause bitter notes to come through in the cup. If you’re using a volumetric machine, be aware of your brew time. If, however, you’re using a manual espresso machine, be aware of your yield. For example, if your coffee is running a little too fast, you’re just making it milder, and probably over-extracting at the same time.
