Basic potato soup 

• 1 Tbsp Butter or Oil 
• 1 cup chopped Onion 
• 1/2 cup chopped Carrot 
• 1/2 cup chopped Celery 
• 1 tsp minced Garlic 
• 1 1/2 tsp Salt 
• Pepper, to taste 
• 2 cups Milk 
• 2 cups Water 
• 6 Tbsp Bob's Red MillÆ Potato Flour 

Heat butter or oil in a medium soup pot over medium heat. Add chopped onions, carrot and celery and saut until tender, about 5 minutes. Add garlic, salt and pepper and cook until fragrant, 1-2 minutes. Add milk and water and stir to combine. Whisking continuously, sprinkle in potato flour and stir until smooth and the desired thickness. Add your favorite seasonings, if desired. 

Makes 4 servings.
