The couverture as its known comes in 3 types with differing percentages of cacao solids. Dark, milk and white. All are easy to use with differing depths of intensity depending on the solids. The higher the percentage the depth and bitterness increases. Can be used in many applications like Ganaches, baking and covering. It is available in 1 kg.
