This is a professional quality Paella pan made in Valencia by Vaello Campos S.L, Spains premier manufacturer of Paella pans. A 60cm pan will serve 9 people as a moderate main course or 13 to 14 people as a tapas portion. These portion sizes are based on the size of a standard British dinner plate. The manufacturer, and the label in the middle of the pan will tell you it will feed a few more but in our experience this is never the case. These Vaello Campos pans are used in homes and restaurants across Spain to produce the nations favourite dish. Manufactured from polished Carbon Steel the pans are very well made and durable, they feature Vaellos signature twin black riveted handles and a dimpled base to allow for an even distribution of heat across the pan to give perfect cooking results every time, letting the rice cook evenly to maximise the flavour. The flared sides of the pan encourage the quick evaporation of liquid and the polished steel prevents the rice from sticking to the base of the pan while cooking. They can be used on hobs (gas electric and ceramic - including induction), on BBq's, in ovens, on open fires or even better on our outdoor gas burner rings which are used all over Spain. The pans require virtually no maintenance at all - just wash them when you are done and dry them immediately. Then coat the surface with a rubbing of any kind of vegetable oil to prevent it from rusting. As you use your paella pan it will tarnish slightly as it becomes seasoned, changing colour and absorbing more flavours as you use it more and more. This is totally normal and should be expected.
