THYME One of the oldest herbs in culinary use, with a sweet, warming flavour and attractive scent. A low-growing, highly aromatic perennial Thyme thrives on dry, chalky, stony soil. Ideal for pockets in rock gardens. The foliage of Thyme cut just before flowering and then dried can be used as a seasoning for venison, cheese, soups, meat and smoked meat. It blends well with many flavours in stuffing for chicken and veal. Believed to help digestion Thyme goes perfectly with any rich or fatty meat, game or poultry dish. It also complements vegetables like tomatoes, courgettes and aubergines, so can be used liberally in ratatouille. Thyme takes an average of between 75 and 90 days from sowing to maturity. It can be picked at any time of the year but is at its best before flowering. Thyme plants should be replaced or divided every two or three years as they can become straggly and less aromatic.
