CRESS Common.
A fast-growing, edible herb that is related to both watercress and mustard.
It shares their peppery, tangy flavour and aroma and in some areas is known as pepper cress, pepper grass, pepperwort or poor man's pepper.
Rich in vitamins and mineral salts, all parts of the young plants are fit for consumption.
Cress is added to soups, sandwiches and salads for its tangy flavour.
It is also eaten as sprouts, and the fresh or dried seed pods can be used as a peppery seasoning.
Sprouting the seeds can take as little as 10 days.
In Britain cut cress shoots are typically used in sandwiches with boiled eggs, mayonnaise and salt.
An annual plant, cress can reach a height of 60 cm with many branches on the upper part of the stem.
Cress can be grown indoors or outside and is ready to harvest 2-3 weeks after sowing.
Native to the Middle East where it has been grown since around 400 BC.
