Sodium Alginate 250g - Food Grade Thickener/Gelling Agent - E401 Description
Sodium Alginate
What is Sodium Alginate?
Sodium Alginate is a thickener/gelling agent, (in acid and/or calcium medium) suited to a wide range of food applications.
E Number: E401
Sodium Alginate is a natural polysaccharide product that was first described in a pentent application by the British chemist Edward C C Stanford in 1881.
In addition to the food industry, the gelling properties of sodium alginate have been used in medical, dental and cosmetic applications for years.
Food grade sodium alginate is widely used in food, especially in diary-based frozen products, (ice-cream, yoghurts, puddings, cheese sauce and desserts) because of its properties of thickening, gelling and stabilizing.
Sodium alginate is vegan.
Sodium alginate (with calcium chloride) can be used as a texturiser in meat to retain water, enhance the elasticity and adhesion of meat products, and improve the freshness of finished products.
This is perfect for ice-creams, it provides a smooth and soft mouthfeel and stabilizes the bubbles in frozen ice-cream and prevents the formation of sugar crystals.
