Product DescriptionProduct description Texturas Gellan is a powerful, plant-based gelling agent derived from bacterial fermentation (Sphingomonas elodea), capable of forming firm, heat-resistant gels at very low concentrations. Ideal for both sweet and savoury recipes, it is commonly used in modern cuisine for creating fluid gels, bakery fillings, dessert layers, and clear slices that hold their shape at temperatures up to 90C. With excellent stability and flavour release, Gellan offers sparkling clarity and high compatibility with protein and other hydrocolloids. It is used extensively in fluid suspensions, icings, dairy gels, and fruit preparations-making it a staple in innovative kitchens.
