The Ambrogio Sanelli utility knife is suitable for a wide variety of tasks in the kitchen. Hasaki means "cutting edge" in Japanese, hence the perfect name for this professional line of Japanese-style knives. The knife blades are made of specially modified NITRO-B (X50CrMoVN15 / AISI440B) stainless steel, in which the addition of nitrogen particles significantly improves its anti-corrosion properties and hardness after heat treatment. The knife hardness is 57-58 HRC. Using Japanese technique, the knives are sharpened on one side, so food only briefly comes into contact with the blade, reducing friction to a minimum. The perfectly balanced and comfortable riveted handles are made of POM synthetic resin. Dishwasher safe.
