Caraibe 66%:Balanced & Velvety Ingredients Dark chocolate (66% cocoa minimum, pure cocoa butter) Cocoa beans, sugar, cocoa butter, emulsifier (soya lecithin), natural vanilla extract. This product may contain traces of nuts, milk and egg proteins, gluten and peanut. Directions To use Valrhona Dark French Chocolate Discs for baking, first chop the chocolate into small, even pieces to ensure even melting. For melting, you can use a double boiler method by placing the chocolate in a heatproof bowl over a pot of simmering water, ensuring the bowl does not touch the water. Stir occasionally until the chocolate is fully melted and smooth. For tempering, cool a portion of the melted chocolate to around 80ÂF, then reheat it to around 110ÂF.
