PARSNIP White Gem White Gem is without doubt one of the most popular varieties of parsnip on the market today. A high yielder, it produces good quality, smooth skinned, stocky roots with broad shoulders. The flesh is creamy-white and has an excellent sweet flavour. If your soil is heavy or shallow these short roots make White Gem the ideal choice. Very reliable it also shows good resistance to canker. The parsnip grows best in an open, sunny site with deep, light soil that is evenly moist. White Gem can also be grown successfully in deep pots or containers. Some growers leave their parsnips in the ground to get slightly frosted and harvest them before the ground freezes over, they claim this makes the parsnips sweeter, others cover the crop with a thick layer of mulch and leave them in the ground for the entire winter, only harvesting them when the soil thaws in spring and make the same claim. One of the best of the older varieties of parsnip, White Gem should be sown between March and May and harvested between October and February.
